Let’s be real: as soothing as cooking can be, it can also get seriously messy.
How is it even possible that something as simple as scrambled eggs can require so many dishes to clean after?
When you’re not in the mood to dirty a million dishes but want something homemade, these delicious and easy snacks you can make in a coffee mug will hit the spot every single time. Happy cooking!
1. The Perfect Muffin
Want a muffin without having to making a whole dozen? Worry not! With this 90 second, adaptable mug muffin recipe, you’ll be in cozy carb bliss in no time.
Combine 1/4 cup flour with one tbsp sugar, a pinch of salt, and 1/8 tsp baking powder in the bottom of your mug. Next, pour three tbsp milk and one tbsp melted coconut oil on top. Finish by adding 1/4 of your favorite fruit, chocolate chips or both on top (my current favorite combination is raspberries and chocolate chips!) and then sprinkle a generous tbsp of sugar on top. Zap for 90 seconds in the microwave, and then devour.
2. Speedy AF Scrambled Eggs
Farewell, scrambled eggs-stuck-to-pan struggles!
To pull this off, you’ll need two eggs, two tbsp milk, two tbsp of grated cheese and salt and pepper to taste. Spritz the inside of your mug with nonstick spray, stir together the eggs and milk with the salt and pepper, and microwave for 45 seconds. Stir and microwave an additional 30-45 seconds before topping with cheese.
At this point, you can either eat your eggs straight out of the mug (#NoShame), or slide them between slices of toast for the easiest breakfast sandwich ever.
3. Nachos (Yes, Seriously)
Thank goodness for the cheesy, crunchy and irresistible joy that is piping hot nachos in a mug.
To prepare, you’ll crush five tortilla chips into the bottom of your mug, and top it with two tbsp cheese, 1/2 cup refried beans, and 1/4 cup of salsa. Add five more crushed chips on top, as well as two more tbsp cheese. Cover and microwave for one minute, then uncover and heat 30 more seconds or until all the cheese is melted.
Top your glorious mug nachos with avocado, sour cream, chilis and scallions to finish.
4. Rice Krispies Treat
Can we stop and appreciate how nostalgically delicious Rice Krispie treats are? With crunchy rice and gooey marshmallows, it’s no wonder these little squares are so crave-able.
To whip one up, you’ll start by microwaving 1/2 tbsp salted butter in your mug, Next, add the marshmallows and microwave for twenty seconds. Finally, stir in a cup of Rice Krispies cereal and eat.
5. Mac and Cheese
Yup, you can in fact make homemade macaroni and cheese in a mug, and it rivals any stovetop version. Pour 1/4 cup water over 1/3 cup of pasta into your mug. Microwave for two minutes, stir and continue microwaving in two minute intervals until you hit six minutes.
Then, stir in 2 tbsp whole milk and 3/4 cup cheddar cheese. Pop in the microwave for one more minute, and that’s it!
